The CulinaryNutrition Certificate program provides students with a comprehensive understanding of the relationship between food, nutrition, and health, as well as the culinary skills necessary to create delicious and nutritious meals. This program is ideal for individuals who are interested in pursuing careers in nutrition, culinary arts, or related fields.
ProgramLearning Outcomes
· Demonstrate knowledge and skills in nutrition and food for entry-level nutrition and food-related careers.
· Apply core food principles to prepare nutritious foods.
· Demonstrate a variety of communication strategies in nutrition and food education.
Students in the Culinary Nutrition Certificate program will learn about the science of nutrition and how to apply it in a culinary context. Topics covered may include macronutrients and micronutrients, dietary guidelines, food allergies and intolerances, and the role of nutrition in disease prevention and management. In addition, students will develop culinary skills such as knife skills, cooking techniques, and recipe development, with a focus on creating healthy and flavorful meals.
The estimated enrollment rate is 50 students, the retention rate is 80%, and the time to completion is two years; the annual completer projection would be 40 students.

The Culinary Nutrition Certificate program is designed to provide students with a comprehensive understanding of the relationship between food, nutrition, and health and the culinary skills necessary to create delicious and nutritious meals. To earn the certificate, students must complete 16.5-18.5 units of coursework, including:
Nutrition Fundamentals: This course provides an overview of the science of nutrition, including the role of macronutrients and micronutrients in the body, the dietary guidelines for Americans, and the role of nutrition in disease prevention and management. Students will learn to read and interpret food labels, evaluate nutritional information, and make informed food choices.
Culinary Skills and Techniques: Students will develop the basic culinary skills and techniques to prepare healthy and flavorful meals. Topics may include knife skills, cooking methods, kitchen safety, and sanitation.
Recipe Development and Modification: This course focuses on recipe development and modification, emphasizing creating healthy and nutritious meals. Students will learn how to modify recipes to meet specific dietary needs, such as those of individuals with food allergies or intolerances.
Food Allergies and Intolerances: This course provides an in-depth understanding of food allergies and intolerances, including their causes, symptoms, and treatments. Students will learn how to identify and avoid common food allergens and prepare meals that are safe for individuals with food allergies or intolerances.
Culinary Nutrition Applications: This course focuses on the practical application of nutrition and culinary skills in a professional setting. Students will learn how to plan menus, develop recipes, and prepare meals that meet specific nutritional needs, such as those of individuals with chronic diseases or conditions.
Overall, the Culinary Nutrition Certificate program requirements provide a well-rounded education that combines the science of nutrition with the practical skills of culinary arts, preparing students for various careers in the food industry.
